What is Grasshopper Pie? A Sweet Legacy

At its core, a Grasshopper Pie is a luscious, no-bake pie featuring a rich chocolate crust and a light, airy, minty mousse filling. Its vibrant green hue and refreshing flavor are inspired by the classic Grasshopper cocktail. This vintage drink, flavored with crème de menthe and crème de cacao, gained significant popularity in the American South during the 1950s and 1960s, charming diners with its unique taste and distinctive color.

While traditional Grasshopper Pies sometimes incorporate alcohol or marshmallows, my rendition offers a delightful twist: it’s completely non-alcoholic and made without marshmallows. This ensures that everyone, from the youngest family members to adults, can safely enjoy this wonderfully refreshing dessert. The result is a creamy, cool, and utterly satisfying pie that captures the essence of the classic flavor profile in a universally appealing format.

The Ideal Make-Ahead Dessert for Any Occasion

The enchanting pastel green color of this no-bake grasshopper pie makes it an exceptionally fitting dessert for festive occasions like St. Patrick’s Day or Easter. Beyond its seasonal charm, its make-ahead nature is a true lifesaver for busy hosts and hostesses. Unlike many desserts that require last-minute attention, this pie needs a good chill time to set perfectly, meaning you can prepare it well in advance.

One of the best features of this particular Grasshopper Pie recipe is that it does NOT need to be frozen to achieve its delightful texture, a common requirement for other variations. A few hours in the refrigerator is all it takes to transform the creamy filling into a firm, sliceable masterpiece. My own children couldn’t stop raving about this pie, and even as someone not typically a huge fan of mint desserts, I found myself going back for seconds. The light, airy whipped mint filling, combined with the rich creaminess and the irresistible crunch of an Oreo crust, creates a flavor experience that is simply unforgettable.

Gathering Your Essential Ingredients

Creating this spectacular no-bake mint chocolate pie requires just 8 simple, readily available ingredients. Each plays a crucial role in building the layers of flavor and texture that make this dessert so exceptional. Quality ingredients ensure the best possible outcome, so try to use fresh, good-quality products where possible.

Various ingredients for Grasshopper Pie Recipe laid out: Oreo cookies, a stick of butter, cream cheese block, powdered sugar, salt, mint extract, green food coloring, and a carton of heavy whipping cream.
  • Oreo Cookies: These form the base of our incredible crust. While pre-made Oreo crusts are an option for convenience, crafting your own ensures a superior buttery flavor and perfect texture. There’s no need to remove the cream filling; it adds to the richness!
  • Butter: Melted butter is essential for binding the Oreo crumbs together, creating a firm and flavorful crust that holds its shape beautifully.
  • Cream Cheese: For the filling, use full-fat or Neufchâtel brick-style cream cheese. Ensure it’s cold, as this helps maintain the filling’s structure and prevents it from becoming too soft.
  • Powdered Sugar: This finely milled sugar dissolves smoothly into the filling, providing sweetness without a grainy texture.
  • Salt: A small pinch of salt enhances all the other flavors, particularly the chocolate and mint, balancing the sweetness.
  • Mint Extract: This is where the magic happens! You can use pure mint extract, peppermint extract, or even crème de menthe extract for a slightly different nuance. Choose your favorite to tailor the mint intensity.
  • Green Food Coloring: Entirely optional, but a few drops create the signature vibrant green hue of a traditional grasshopper pie, making it visually appealing and festive.
  • Heavy Whipping Cream: When whipped to stiff peaks, this ingredient provides the light, airy, and fluffy texture for our mousse-like filling. It’s crucial that the cream is very cold for successful whipping. Alternatively, an 8oz tub of frozen whipped topping (like Cool Whip) can be used, but consider reducing the powdered sugar to 1 cup, as whipped topping is usually pre-sweetened.

Crafting the Irresistible Oreo Cookie Crust

The foundation of this delectable no-bake grasshopper pie is a simple yet incredibly delicious two-ingredient Oreo crust. It’s quick to prepare and provides the perfect crunchy contrast to the creamy mint filling.

A four-panel image showing the steps for making an Oreo pie crust: 1) Oreos in a food processor, 2) Crushed Oreos, 3) Crushed Oreos and melted butter in a pie dish, 4) The finished Oreo crust pressed into the dish.
  1. Begin by placing the entire Oreo cookies, cream filling and all, into a food processor. The filling adds extra richness and helps the crust bind beautifully.
  2. Pulse or run the food processor until the cookies are transformed into fine, uniform crumbs. Consistency is key here for a solid crust.
  3. Transfer the finely crushed Oreo crumbs into a 9-inch pie dish. Pour the melted butter over the crumbs.
  4. Using a fork or your hands, thoroughly mix the crumbs and butter until they are well combined and resemble wet sand. Press this mixture firmly and evenly onto the bottom and up the sides of the pie dish. Ensure it’s compact for a stable crust.

CHILL the prepared Oreo crust in the freezer while you move on to making the mint filling. This step is crucial for helping the crust set and prevents it from crumbling when sliced. If you’re short on time, a store-bought pre-made Oreo crust can be used, though the homemade version offers a superior flavor and texture.

Preparing the Dreamy Mint Cream Cheese Filling

The star of this grasshopper pie is its luscious, mousse-like mint filling. It’s incredibly easy to prepare and has the delightful texture of a no-bake cheesecake. The combination of whipped cream and a mint-infused cream cheese mixture results in a light, airy, yet rich filling that’s simply irresistible. Here’s how to create this dreamy center:

A six-panel image showing the steps for making the grasshopper pie filling: 1) Beaten cream cheese, 2) Cream cheese mixed with powdered sugar, mint extract, and food coloring, 3) Whipped heavy cream with stiff peaks, 4) Whipped cream added to the cream cheese mixture, 5) The mixtures combined, 6) Filling spread into the Oreo crust.
  1. In a large mixing bowl, use an electric hand mixer to beat the cold brick cream cheese until it is smooth and creamy, with no lumps. This forms the rich base of your filling.
  2. Add the powdered sugar, salt, mint extract, and about 3 drops of green food coloring to the cream cheese. Mix thoroughly until all ingredients are well combined and the color is evenly distributed. Remember to make the color slightly darker than your desired final shade, as it will lighten when combined with the whipped cream.
  3. In a separate, very cold bowl (preferably from a stand mixer), use the whisk attachment to whip the heavy cream until it forms stiff peaks. This means the cream will hold its shape firmly when the whisk is lifted.
  4. Gently fold the whipped cream into the mint cream cheese mixture. Use a spatula to incorporate it carefully, preserving the airiness of the whipped cream.
  5. Continue to mix the two components together with the electric hand mixer on low speed until the filling is completely smooth, thick, and uniform in color and texture. The mixture should be very thick and hold its shape.
  6. Carefully spread the prepared mint filling evenly into the chilled Oreo crust. Use an offset spatula or the back of a spoon to smooth the top.

CHILL the assembled grasshopper pie in the refrigerator for at least 2 hours. For a quicker set, you can chill the pie in the freezer for 30-60 minutes before transferring it to the fridge. Adequate chilling time is crucial for the pie to firm up completely, making it easy to slice and serve.

Expert Tips for a Flawless Grasshopper Pie

  • Cold Ingredients are Key: Ensure your cream cheese and heavy whipping cream are straight from the fridge and very cold. This is vital for achieving the proper consistency in your filling.
  • Don’t Over-mix the Cream Cheese: Beat cream cheese only until smooth. Over-mixing can make it too soft and difficult to incorporate other ingredients.
  • Whip Cream to Stiff Peaks: For the airiest filling, whip your heavy cream until it holds firm, distinct peaks. Soft peaks won’t give you the desired mousse-like texture.
  • Adjust Green Food Coloring: Start with a few drops and add more if needed. The color will lighten as it mixes with the white cream cheese and whipped cream.
  • Firm Crust is Best: Press the Oreo crust firmly into the pie dish. A compact crust prevents crumbling when you cut into the pie.
  • Chill Thoroughly: The most important step! A minimum of 2 hours in the refrigerator allows the pie to set properly, ensuring clean slices. Don’t rush this step.
  • For a Stronger Mint Flavor: If you love a bold mint kick, you can increase the mint extract by a quarter or half teaspoon. Taste and adjust to your preference.
  • Cream Cheese Softening (If necessary): If your cream cheese is too hard to beat smoothly even when cold, let it sit on the counter for 5-10 minutes, but no longer, to slightly soften the very outer layer.

Cutting and Serving Your Perfect Pie

Once your no-bake grasshopper pie is thoroughly chilled and set, it’s ready to be showcased and enjoyed. To add a delightful textural contrast and visual appeal, you might consider sprinkling extra crushed Oreo cookie crumbs over the top just before serving. A single crushed cookie is typically enough to create this inviting garnish.

For pristine slices, a little trick goes a long way: run a sharp knife under hot water for a few seconds, then dry it thoroughly with a towel before making each cut. This warming process helps the blade glide through the creamy filling and crisp crust without sticking, resulting in clean, elegant slices. This impressive pie generously serves 8-12 people, depending on how large you cut each slice.

To elevate the dessert experience even further, we highly recommend serving each slice with a generous drizzle of thick chocolate sauce, either on the plate beside the pie or directly over the top. Brands like Ghirardelli or Torani offer excellent quality chocolate sauces that complement the mint and chocolate flavors beautifully. For an extra touch of sophistication, consider adding a fresh mint sprig or a few chocolate shavings.

Storing and Freezing Your Grasshopper Pie

This no-bake grasshopper pie is not only delicious but also convenient for make-ahead planning and enjoying leftovers. Properly stored, it maintains its delightful texture and flavor for several days.

To store any remaining pie, simply cover it tightly with plastic wrap or aluminum foil. Place it in the refrigerator, where it will stay fresh and delicious for up to 5-7 days. This makes it an excellent dessert to prepare a day or two in advance of a gathering.

If you wish to extend its shelf life, this pie freezes beautifully. To freeze, cover the entire grasshopper pie tightly with multiple layers of plastic wrap, followed by a layer of aluminum foil. This double-layer protection helps prevent freezer burn. It can be stored in the freezer for up to 3 months. When you’re ready to enjoy it, simply transfer the frozen pie to the refrigerator and allow it to thaw overnight before slicing and serving. Its creamy texture will be perfectly restored.

Yields: 8 servings

Ingredients

Oreo Crust:

  • 25 regular Oreo cookies
  • 5 Tbsp (71 g) butter, melted

Mint Filling:

  • 8 oz (226 g) brick cream cheese, COLD (full fat or Neufchâtel)
  • 1 ½ cups (180 g) powdered sugar
  • 1/8 tsp salt
  • 1/2 tsp mint extract
  • 3 drops of green food coloring
  • 1 ½ cups (355 ml) heavy whipping cream, COLD

Equipment

  • Food Processor
  • Silicone Spatula Set
  • Electric Hand Mixer
  • KitchenAid 5-Qt. Stand Mixer
  • Wilton 3-Piece Icing Spatula Set

Instructions

  1. Place the Oreo cookies (filling and all) inside of a food processor. Pulse or run the machine until cookies resemble fine crumbs. Empty crumbs into a 9-inch pie dish. Add the melted butter. Mix the crumbs and butter together and press evenly on the bottom and up the sides of the pie dish. CHILL the Oreo crust in the freezer while preparing the mint filling.
  2. Beat cream cheese with an electric hand mixer inside of a large bowl until smooth. Mix in the powdered sugar, salt, mint extract, and 3 drops or so of green food coloring. (Make it darker than you normally would because it lightens with the cream cheese and whipped cream.)
  3. Whip the heavy cream to stiff peaks using a stand mixer with the whisk attachment. Add the whipped cream to the mint cream cheese mixture. Use the electric hand mixer to beat the two mixtures together. Mixture should be very thick.
  4. Spread filling evenly into the chilled Oreo crust. You may sprinkle extra crushed Oreo cookie crumbs on top of the grasshopper pie, if desired. (One cookie, crushed, is plenty.)
  5. CHILL the pie in the fridge for 2+ hours. Alternately chill the pie in the freezer for 30-60 minutes if desired, to speed things along. To cut the pie, run a knife under hot water and dry it off with a towel before making each cut. This pie will serve 8-12 people, depending on the size of the slice.

Notes

  • Serve with thick chocolate syrup (like Ghirardelli or Torani), if desired.
  • Cover any leftovers with plastic wrap or foil and store in the fridge up to 5-7 days.
  • To freeze, cover the grasshopper pie tightly with plastic wrap and foil and freeze up to 3 months. Thaw in refrigerator overnight before serving.
