- ½ cup shredded/matchstick carrots, (about 5-6 baby carrots cut into matchsticks)
- ½ cup finely shredded cabbage or cole slaw mix
- 3-4 green onions, thinly sliced
- ¼ cup fresh cilantro, chopped
- ⅓ cup sweet chili sauce, (typically found in the Asian section of your grocery store)
- 1 Tbsp smooth peanut butter
- Lettuce Leaves, (butter or bib lettuce are ideal for wrapping, but romaine or green leaf lettuce can also be used.)

Heat a large skillet over medium heat. Add the canola oil. Once hot, add the cubed chicken, minced garlic, chopped onions, salt, and pepper. Cook the mixture for approximately 6-8 minutes, stirring occasionally, until the chicken is no longer pink and the onions have softened to a translucent texture.
