Ingredients

Rumbi Rice:

  • 2 ½ cups water
  • 14 oz can coconut milk (about 1 ½ cups; light coconut milk recommended)
  • ½ Tbsp granulated sugar
  • 2 cups long grain white rice
  • 15 oz can red beans, drained and rinsed

Spicy Hawaiian Teriyaki Sauce:

  • ¾ cups Mr. Yoshida’s teriyaki sauce
  • 1 tsp soy sauce
  • 2 tsp chili garlic sauce (found in the Asian section of grocery stores)
  • 1 tsp fresh ginger, minced
  • Pinch salt
  • 1 Tbsp light brown sugar
  • 1 Tbsp cornstarch, if needed for thickening
  • 1 Tbsp COLD water, if needed for thickening

Vegetables and Chicken:

  • 2 chicken breasts (about 2 cups, cubed)
  • Salt & Pepper, to taste
  • 1 Tbsp canola oil
  • 4 carrots, peeled and grated (approximately 1 ½ cups)
  • 3 celery stalks, washed and sliced (approximately 1 ½ cups)
  • 1 zucchini, chopped into small cubes (approximately 1 ½ cups)
  • 1 ½ cups chopped broccoli florets (approximately ½-¾ large head of broccoli)

Instructions

  1. FOR THE RICE: Combine water, coconut milk, granulated sugar, long grain white rice, and red beans in a rice cooker. Gently stir all ingredients together until the beans are evenly mixed throughout. Place the lid securely on the rice cooker and start the cooking cycle. Once cooked, fluff the rice with a fork before serving to ensure a light and airy texture.

    (If you don’t have a rice cooker: Combine water, coconut milk, and sugar in a medium saucepan. Stir in the rice and beans. Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low, cover the saucepan tightly, and let it simmer for 18 to 20 minutes, or until the rice is tender and all the liquid has been absorbed.)

  2. FOR THE TERIYAKI SAUCE: In a small saucepan, combine the Mr. Yoshida’s teriyaki sauce, soy sauce, chili garlic sauce, minced fresh ginger, a pinch of salt, and light brown sugar. Bring the mixture to a boil over medium heat, then reduce it to a gentle simmer. If you desire a thicker sauce, create a slurry by whisking together 1 tablespoon of cornstarch with 1 tablespoon of cold water. Slowly add this cornstarch slurry to the simmering sauce, stirring constantly until it reaches your desired consistency, which should be slightly thicker than store-bought teriyaki sauce. Allow the sauce to simmer for approximately one minute to cook out the cornstarch taste. Remove from heat and let cool to room temperature before serving with your rice bowls. (Note: If the sauce becomes too thick upon cooling, you can thin it out by stirring in a little more teriyaki sauce. Sometimes, simply heating the sauce without any additional thickening is sufficient.)

  3. FOR THE VEGETABLES & CHICKEN: Season the cubed chicken breasts generously with salt and pepper on all sides. Grill the chicken for about 4 minutes per side, or until it is thoroughly cooked through and golden brown. Once cooked, remove the chicken from the grill and allow it to rest for a few minutes before slicing or cubing; this step is crucial for keeping the chicken juicy (you can let it rest while you prepare the vegetables). Heat 1 tablespoon of canola oil in a large skillet or wok over medium-high heat. Add the grated carrots, sliced celery, cubed zucchini, and chopped broccoli florets to the hot skillet. Sauté the vegetables quickly, for only 1-2 minutes maximum, just until they are crisp-tender. Avoid overcooking to maintain their vibrant color and satisfying crunch. To serve, portion the Rumbi rice into bowls, top with the grilled chicken pieces, and then add a generous amount of the sautéed vegetables.
