Effortless Baking: The Brilliance of Semi-Homemade Sweet Rolls

We all love the idea of freshly baked goods, but the reality of life means not everyone has the luxury of time or the advanced baking skills required for traditional yeast dough. Working with yeast can be particularly daunting for less experienced bakers, often leading to apprehension about achieving the perfect rise and texture.

This is where the magic of “semi-homemade” comes into play. Even as an experienced baker, I often opt for the incredible convenience of reaching into my freezer for a loaf of Rhodes White Bread Dough. Using high-quality pre-made yeast dough like Rhodes dramatically simplifies the process without compromising on taste or texture. The result is a batch of sweet rolls that taste just as fresh, tender, and delicious as if you had made the dough from scratch.

Tips for Thawing Rhodes Bread Dough:

  • Room Temperature Thaw: For same-day baking, allow the frozen dough to thaw and rise at room temperature for approximately 2-3 hours. The exact time can vary depending on your kitchen’s temperature and humidity.
  • Overnight Refrigeration: For ultimate convenience, especially when planning for breakfast or brunch, simply place the loaf of Rhodes White Bread dough in the refrigerator overnight. This slow thaw allows it to be perfectly ready to roll out the next morning.
  • Controlling the Rise: If your dough is rising too quickly or becomes overly puffy, you can always slow down the process by briefly placing it back in the refrigerator.
  • Expedited Thawing: In a pinch, Rhodes offers helpful tips on their website to expedite the thawing process if you’re short on time. Always ensure the dough is pliable and slightly risen before proceeding.

Utilizing pre-portioned, ready-to-use yeast dough transforms a potentially complex recipe into a wonderfully accessible baking project, allowing you to enjoy the rewards of “homemade” with significantly less effort.

Rhodes bread dough is expertly rolled flat, generously coated in a delicious flavored lemon sugar, topped with vibrant fresh blueberries, carefully rolled up, sliced into even pieces, and placed in a pan to rise before baking.

Crafting Your Lemon Blueberry Rolls: A Step-by-Step Guide

Creating these luscious lemon blueberry sweet rolls is an enjoyable process, and with our detailed instructions, you’ll achieve bakery-quality results every time. Here’s how to bring this delightful recipe to life:

Ingredients You’ll Need:

For the Dough:

  • 1 loaf Rhodes White Bread, thawed and slightly risen

For the Lemon Blueberry Filling:

  • ¼ cup (57 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1 Tbsp cornstarch
  • ½ tsp ground ginger (optional, for a subtle warmth)
  • ¼ tsp ground nutmeg (optional, for depth of flavor)
  • Zest of 1 large lemon
  • 2-4 Tbsp fresh lemon juice
  • 1 ½ cups (210 g) fresh blueberries, rinsed and patted dry

For the Tangy Lemon Cream Cheese Frosting:

  • 2 oz cream cheese, softened
  • 2 Tbsp (57 g) unsalted butter, softened
  • Zest of 1 lemon
  • 1-2 Tbsp fresh lemon juice
  • ½ cup (60 g) powdered sugar, sifted

Equipment:

  • Rolling Pin (a mini rolling pin can be helpful)
  • 13×9-inch baking pan
  • Citrus Zester
  • Lemon Juicer
  • Electric Hand Mixer
  • Large mixing bowls
  • Plastic wrap

Detailed Instructions:

  1. Prepare the Dough: If not already done, place your frozen Rhodes White Bread dough on a lightly greased baking sheet. Cover it loosely with plastic wrap that has been lightly sprayed with cooking spray to prevent sticking. Allow the dough to thaw and rise for approximately 2-3 hours at room temperature, or for a slower, more controlled rise, thaw it overnight in the refrigerator. The dough should be soft, pliable, and slightly puffy.
  2. Roll Out the Dough: On a lightly floured surface, use a rolling pin to roll the risen dough into a large rectangle, aiming for dimensions of about 10-inches wide by 15-inches long. This size allows for generous filling and neat rolls.
  3. Apply the Butter: Spread the softened butter evenly over the entire surface of the dough, leaving a small, unbuttered margin (about ½ inch) along one of the long edges. This bare edge will help seal the roll later.
  4. Prepare the Lemon Sugar Filling: In a medium bowl, combine the granulated sugar, cornstarch, ground ginger (if using), and ground nutmeg (if using). Add the fresh lemon zest, rubbing it into the sugar with your fingertips to release its aromatic oils. Gradually add 2-4 tablespoons of fresh lemon juice, mixing until you achieve a thick, clumpy, wet-sand-like consistency. You want the sugar mixture to be moist enough to stick but not overly liquid.
  5. Add Filling and Blueberries: Evenly sprinkle the prepared lemon sugar mixture over the buttered surface of the dough. Use your fingers to gently spread it, ensuring an even layer. Then, scatter the fresh blueberries uniformly across the lemon sugar.
  6. Roll and Slice the Dough: Starting from the long end of the dough that has the filling all the way to the edge, carefully roll the dough tightly towards the unbuttered long edge. As you roll, gently tuck the blueberries inside to prevent them from falling out. Once rolled, pinch the seam firmly to seal it, and place the log seam-side down. Using a sharp knife or dental floss, cut the roll into 12 even pieces, approximately 1 ¼ inches thick.
  7. Arrange and Rest: Lightly grease a 13×9-inch baking dish. Arrange the sliced rolls cut-side down in the prepared dish, leaving a little space between each roll for expansion. Cover the dish loosely with greased plastic wrap. Allow the rolls to rest and slightly proof for another 15-20 minutes at room temperature. During this time, some blueberry juices might start to ooze out, which is perfectly normal and contributes to the sticky, gooey texture.
  8. Preheat Oven: While the rolls are resting, preheat your oven to 350 degrees Fahrenheit (175°C).
  9. Bake the Rolls: Bake the lemon blueberry rolls for 20 to 25 minutes, or until they are beautifully golden brown on top and cooked through in the center and bottom. To check for doneness, you can gently separate a roll and ensure the dough is no longer raw. Remove from the oven and allow them to cool slightly in the pan while you prepare the frosting.
  10. Prepare the Lemon Cream Cheese Frosting: In a large mixing bowl, combine the softened cream cheese, softened butter, and fresh lemon zest. Using an electric hand mixer, beat these ingredients together until smooth and creamy. Gradually add the sifted powdered sugar and 1-2 tablespoons of fresh lemon juice. Start with less lemon juice for a thicker frosting, or add more for a thinner, glaze-like consistency. Beat until all ingredients are well incorporated and the frosting is smooth and fluffy.
  11. Frost and Serve: While the rolls are still warm (but not piping hot), generously spread the tangy lemon cream cheese frosting over them. The warmth of the rolls will allow the frosting to melt slightly, creating an even more delightful experience. Serve immediately and enjoy warm!

The Ultimate Warm Treat

As these lemon blueberry rolls bake, the blueberries release their juices, mingling with the lemon-sugar filling to create an incredibly sticky, sweet, and wonderfully gooey blueberry sauce. This luscious sauce permeates the tender dough, making each bite an explosion of fruity, tangy, and sweet flavors. The zesty lemon cream cheese frosting adds a final layer of brightness, perfectly balancing the richness of the rolls.

These sweet rolls are undeniably best enjoyed warm, right out of the oven, when the dough is pillowy soft and the frosting is just beginning to melt. The aroma alone is enough to get your taste buds tingling!

Serving Suggestions:

  • Breakfast or Brunch: A classic choice! Serve alongside coffee, tea, or a glass of fresh orange juice for a truly decadent start to your day.
  • Dessert: Elevate these rolls by serving them slightly warmed with a scoop of vanilla bean ice cream or a dollop of fresh whipped cream for a comforting and impressive dessert.
  • Afternoon Treat: Enjoy one with your favorite hot beverage for a delightful afternoon pick-me-up.

Storage and Reheating:

  • Storage: Any leftover rolls can be stored in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 3 days. Ensure they are covered to maintain their freshness and moisture.
  • Reheating: To revive their fresh-baked goodness, simply microwave individual rolls for about 10-15 seconds. Alternatively, you can warm them gently in a preheated oven at 250°F (120°C) for 5-7 minutes until soft and warm throughout.

The combination of bright, zesty lemon and sweet, juicy blueberries in these sweet rolls is an absolute winner, creating a flavor profile that is both comforting and exhilarating. If you’re a devoted fan of lemon, much like I am, you might also adore these other citrus-infused delights:

Tips for Sweet Roll Success:

  • Don’t Overbake: Overbaking can lead to dry rolls. Keep an eye on them and remove them from the oven as soon as they are golden brown and cooked through.
  • Fresh Blueberries are Best: While frozen blueberries can be used, fresh ones provide the best texture and flavor for this recipe. If using frozen, do not thaw them first; sprinkle them directly onto the dough, and you may need to add a couple of minutes to the baking time.
  • Room Temperature Ingredients: Ensure your butter and cream cheese for both the filling and the frosting are properly softened at room temperature. This makes them easier to work with and ensures a smooth, lump-free frosting.
  • Even Rolls: To get perfectly even slices, chill the rolled dough log in the refrigerator for 10-15 minutes before cutting. This firms up the dough and filling, making it easier to slice cleanly.
  • Adjust Frosting Consistency: The amount of lemon juice in the frosting can be adjusted to your preference. For a thicker, more spreadable frosting, use less juice. For a thinner, pourable glaze, add a little more.

Happy Baking, and enjoy every delightful bite of these irresistible Lemon Blueberry Rolls!

Equipment

  • Mini Rolling Pin
  • 13×9-inch pan
  • Zester

Instructions

  1. Place frozen dough on a greased baking sheet. Cover with sprayed plastic wrap. Thaw and rise about 2-3 hours at room temperature or overnight in the refrigerator.
  2. Roll the dough into a large rectangle about 10-inches wide by 15-inches long. Smear softened butter on all but one of the long edges.
  3. Combine the sugar, cornstarch, ginger, nutmeg, and lemon zest in a bowl. Add just enough lemon juice to the sugar mixture to form a thick clumpy mixture like wet sand. Sprinkle the flavored lemon sugar on top of the butter and spread it with your fingers to cover the butter. Then evenly sprinkle the filling with fresh blueberries.

  7. Bake at 350˚F for 20 to 25 minutes or until golden brown on top and the dough is cooked in the center and on bottom. Allow the rolls to cool slightly.
  8. Make the frosting by beating the cream cheese, butter, and lemon zest with an electric hand mixer in a large bowl. Add the powdered sugar and 1-2 Tbsp lemon juice. (Use less lemon juice for a thicker frosting, or more lemon juice for a thinner glaze.) Mix until incorporated. Spread over the lemon blueberry sweet rolls. Enjoy warm.
