To build each pinwheel: start by spreading softened cream cheese over a spinach tortilla.

Add a thin layer of cranberry salsa over part of the cream cheese to keep the flavors balanced.

Top the cranberry layer with thinly sliced turkey. Stacking several slices gives each bite a satisfying balance of meat and spread.

Roll the tortilla tightly, beginning at the side with the meat and salsa. Use a serrated knife to cut 2-inch pieces, and secure each piece with a toothpick so they don’t unravel.

Cranberry Turkey Pinwheels
Ingredients
- 4 Extra Large Spinach Tortillas
- 8 oz cream cheese or Neufchatel, softened
- 1 cup Cranberry Salsa (see recipe)
- 36 slices thinly sliced turkey lunch meat
- Toothpicks
Instructions
- Spread about 2 oz of softened cream cheese evenly over each extra large spinach tortilla.
- Spread up to 1/4 cup cranberry salsa in a thin layer over half of the cream cheese.
- Layer 9 slices of turkey lunch meat on top of the cranberry salsa.
- Roll the tortilla tightly starting at the side with the meat and salsa. Use a serrated knife to slice into 2-inch pieces, and insert a toothpick into each to keep them secure.
- Cover and refrigerate until ready to serve.
