Chocolate Peanut Butter Cup Donuts

Ingredients

  • 8 ct Pillsbury Grands Homestyle Buttermilk Biscuits (not flaky layers)
  • oil, for frying
  • ½ cup (85 g) semi-sweet chocolate chips
  • ¼ cup (59 ml) heavy cream
  • ¼ cup (66 g) creamy peanut butter
  • 35 mini peanut butter cups, cut in half

Instructions

  • Fill a large stock pot or Dutch oven with 2 to 3 inches of oil and heat over medium until hot enough for frying.
  • Open the can of biscuits and separate each one. Flatten each biscuit slightly and cut out the center with a small biscuit cutter to form a donut shape.
  • When the oil is hot, fry 3–4 donuts at a time until golden on each side, turning carefully with a skewer or spatula. Drain on paper towels until slightly cooled and repeat with remaining biscuits.
  • Warm the heavy cream (about 30 seconds) until it begins to simmer. Pour over the chocolate chips and stir until smooth to make a ganache.
  • Dip the top half of each donut into the ganache and set on a cooling rack over a baking sheet to catch drips. Allow the ganache to set slightly before adding toppings.
  • Press halved mini peanut butter cups onto the ganache after it has cooled enough so they won’t melt.
  • Warm the peanut butter for about 15 seconds until slightly soft, transfer to a small bag, snip a corner, and drizzle over the donuts in a zig-zag. Store extras in a covered container for a day or two.
