These Chocolate Coconut Caramel Popcorn Bars are a fast, festive option that delivers big flavor with minimal effort.
Think of these bars like a rice krispie treat in spirit: caramel popcorn is folded into a mixture of melted butter and marshmallows, then combined with sweetened flaked coconut and mini chocolate chips. The mixture is pressed into a greased pan to set — no baking required. If you don’t want to make caramel popcorn from scratch, store-bought caramel popcorn works fine. Full disclosure: I had a hard time waiting for these to cool. They’re irresistible warm and gooey, with melty chocolate and chewy coconut. If you can resist the temptation to eat them right away, they also make lovely gifts for neighbors or a welcome addition to holiday treat trays.

Chocolate Coconut Caramel Popcorn Bars
Ingredients
- 4 Tbsp butter
- 10 oz package marshmallows, (about 4 cups miniature marshmallows)
- 8 cups caramel popcorn
- 1 cup sweetened flaked coconut
- 1 cup mini chocolate chips
Instructions

Grease a 9 x 13 inch baking pan and set aside.

In a large saucepan over medium heat, melt the butter. Stir in the marshmallows until fully melted and smooth.

Remove the pan from heat, then fold in the caramel popcorn and coconut until the popcorn is well coated.

Stir in the chocolate chips just until combined. They should begin to soften but not fully melt.

Press the mixture firmly into the prepared pan and allow to cool completely. Cut into bars and serve.
