Isn’t the Super Bowl coming up soon? I’m not much of a sports fan, but I love gathering with friends and sharing good food. When I bring an appetizer to a party I want it to be pretty, tasty, and easy to customize. These colorful tortilla pinwheels check all the boxes — they look great on a platter and can be filled with your favorite sandwich ingredients.

Building a pinwheel is simple: you have five basic layers — the tortilla, the meat (lunch meats or diced chicken), cheese (shredded works best to keep the roll full and round), the fresh toppings (tomato, lettuce, etc.), and a spread to bind everything together, like mayonnaise or cream cheese.

To keep pinwheels neat and prevent the filling from escaping, roll the tortilla as tightly as possible, wrap it snugly in plastic wrap, and chill for one to two hours. Chilling helps the spread set and hold the roll together. When ready to serve, unwrap and slice with a serrated knife into 1 1/8″ rounds. Arrange them on a platter and enjoy.

Tortilla Pinwheels

These pinwheels are a satisfying party bite—filling enough to be substantial but still light, so guests don’t overeat on snacks.

Ingredients

  • 1 extra large Don Pancho spinach tortilla
  • 8 slices Oscar Meyer deli fresh turkey
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced Roma tomatoes
  • Green leaf lettuce, a few leaves
  • 1/4 cup light mayonnaise
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp paprika
  • 1/8 tsp chili powder
  • 1/8 tsp cayenne pepper

Instructions

  • Combine the mayonnaise, salt, garlic powder, onion powder, paprika, chili powder, and cayenne in a small bowl and whisk until smooth.
  • Spread the seasoned mayo on the tortilla so it is thin on one half and thicker on the other half.
  • Lay the 8 slices of turkey over the thick side of the mayo.
  • Sprinkle shredded cheddar and diced tomatoes across the center of the tortilla. Add a few leaves of lettuce alongside the tomatoes and cheese.
  • Starting at the meat-covered side, roll the tortilla up as tightly as you can. Wrap it snugly in plastic wrap and refrigerate for at least one hour. Chilling helps the spread bind the pinwheel shut.
  • When ready to serve, unwrap and use a serrated knife to cut into 1 1/8″ slices. Arrange on a platter and serve.

Notes

  • One tortilla yields about 10 pinwheels.

Roast Beef Variation

  • 1 extra large Don Pancho chile tomato tortilla
  • 8 slices Oscar Meyer deli fresh roast beef
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup light mayonnaise or light Miracle Whip
  • 1 tsp Dijon or spicy mustard
  • Green leaf lettuce, a few leaves
  1. Spread the mayo or Miracle Whip with the mustard on the tortilla so one half is thin and the other half is thicker.
  2. Place the roast beef on the thick side of the spread.
  3. Sprinkle shredded mozzarella down the center and add a few lettuce leaves alongside the cheese.
  4. Roll tightly from the meat side, wrap snugly in plastic wrap, and refrigerate until ready to slice and serve.
