Nuts, marshmallows, and chocolate combine to make these irresistible homemade Rocky Road Brownies!

I adore brownies and rocky road ice cream, so combining the two felt inevitable. These brownies capture that same comforting mix of chocolate, chewy marshmallows, and crunchy nuts. They’re perfect for a weeknight treat, potluck, or any time you need a chocolate fix.

When these come out of the oven, the marshmallows puff and brown slightly while the walnuts peek through the chocolate. They’re rich, slightly gooey, and studded with texture—hard to resist and impossible to share without a smile.

Rocky Road Brownies
Ingredients
For the Brownies:
- 2 cups (400 g) granulated sugar
- 1 cup (226 g) butter, melted
- 4 large eggs
- 2 tsp vanilla extract
- 6 Tbsp unsweetened cocoa powder
- 2 cups (240 g) all-purpose flour
- 8 oz (227 g) mini marshmallows, (about half a bag)
- ½ cup (56 g) walnuts, chopped
For the Frosting:
- ¼ cup (57 g) margarine
- 1 ½ Tbsp unsweetened cocoa powder
- 3 Tbsp milk
- 2 ½ cups (300 g) powdered sugar
- ½ tsp vanilla
Instructions

Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.

Combine the granulated sugar and melted butter in an electric mixer. Add the eggs one at a time, beating until combined. Stir in the vanilla.

Add the cocoa powder and flour, mixing until the batter is smooth and well combined.

Pour the batter into the prepared pan and spread evenly. Bake at 350°F for 23–25 minutes, until a toothpick comes out with a few moist crumbs.

Remove the pan from the oven and immediately cover the hot brownies with the mini marshmallows. Return to the oven for about 2 minutes, just until the marshmallows puff up. Remove and sprinkle with the chopped walnuts.

To make the frosting, melt the margarine in a small saucepan over medium heat. Stir in the cocoa and milk, bring to a brief boil, then remove from heat and whisk in the powdered sugar and vanilla until smooth.

Drizzle the warm frosting over the brownies while they are still hot, leaving some marshmallows visible. Let the brownies cool completely before cutting. Enjoy!
