Ingredients
- 1 cup (200 g) granulated sugar, (plus extra for rolling)
- ¾ cup (142 g) shortening, (I prefer the Butter flavored Crisco)
- 1 large egg
- ¼ cup (60 ml) molasses
- 2 cups (240 g) all-purpose flour, (stir, spoon & level)
- 2 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- ¼ tsp ground cloves
- ½ tsp salt
- 1 cup (170 g) white chocolate chips
Instructions

In a stand mixer, cream granulated sugar and shortening until light and fluffy. Add the egg and beat until the mixture is thick and well combined. Scrape down the sides of the bowl. Add the molasses and stir until fully incorporated.

In a separate medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cloves, and salt. Gradually add the dry ingredients to the creamed mixture, mixing on low speed until just blended and no dry streaks remain. Be careful not to overmix. Gently fold in the white chocolate chips. If the dough appears very soft, you may chill it in the freezer for about 30 minutes, or in the refrigerator for an hour, to make it easier to handle.

Preheat your oven to 350°F (175°C). Shape the dough into 1½-inch balls and roll each ball generously in extra granulated sugar. Place the sugared dough balls about 2 inches apart on a baking sheet lined with parchment paper or lightly greased.

You will also need to increase the all-purpose flour to 2¼ cups. When substituting butter, it is absolutely essential to chill the dough thoroughly (for at least 1 hour) before baking to prevent the cookies from spreading too much.
