Hi—Danielle here from Live Well, Bake Often. I’m excited to share a simple muffin recipe that combines fresh raspberries and chocolate for a bright, delicious treat. These muffins are easy to make, portable for busy mornings, and versatile enough for a snack or light dessert.

I love grab-and-go breakfasts, and these raspberry chocolate chip muffins fit the bill. Some mornings I have time to sit down and enjoy breakfast; other days I need something quick. These muffins are lightly sweetened, and the raspberries plus chocolate chips give them lots of flavor. If raspberries aren’t available, chopped strawberries work well as a substitute.

The ingredients are simple and likely on hand. I used all-purpose flour, but you can swap half the flour for whole wheat or use white whole wheat for a heartier version. Serve the muffins with extra fresh fruit or a dollop of yogurt for a complete morning meal.

Raspberry Chocolate Chip Muffins

Ingredients
- 1 ½ cups (180 g) all-purpose flour (stir, spoon & level)
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¼ cup (59 ml) oil (canola or vegetable)
- ½ cup (118 ml) milk
- 1 large egg
- ½ cup (100 g) granulated sugar
- 1 teaspoon vanilla extract
- ½ cup (85 g) mini chocolate chips
- 1 cup (140 g) fresh raspberries
Instructions
- Preheat oven to 350°F (175°C). Spray a standard 12-count muffin pan with non-stick spray and set aside.
- In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, combine the oil, milk, egg, sugar, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined; avoid overmixing.
- Gently fold in the chocolate chips and raspberries.
- Divide the batter evenly among the muffin cups.
- Bake at 350°F for 18–22 minutes, until tops are lightly golden and a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling.
