Hello, fellow dessert enthusiasts! Sarah from Whole and Heavenly Oven is delighted to join you once again, ready to infuse your weekend with an abundance of sweetness. If you know anything about my notoriously large and perhaps slightly excessive sweet tooth, you’d expect nothing less! Weekends are synonymous with baking, and today, we’re making something truly special happen. Prepare your taste buds for an unforgettable treat.

Embrace the Weekend with Irresistible Homemade Biscotti
Let’s dive right into it: my weekend has been absolutely fabulous so far, and would you like to know the secret ingredient? It’s been filled with homemade biscotti! That’s right, friends, a batch of freshly baked biscotti is the ultimate way to elevate any weekend from ordinary to extraordinary. Forget about hitting the snooze button until noon or spending countless hours binge-watching your favorite food shows (though, let’s be honest, we’ve all been there!). There’s simply nothing quite like savoring warm, homemade biscotti alongside a steaming cup of freshly brewed coffee or a creamy cappuccino. Of course, you can absolutely enjoy your delicious biscotti *while* catching up on your favorite culinary shows – I speak from extensive personal experience!

The Sophistication of Biscotti: A Grown-Up Cookie Experience
I often think of biscotti as the sophisticated cousin of the traditional cookie. While children certainly adore them, biscotti truly shine for those who appreciate a dessert with a little more character and refined texture. I confess, I am a self-proclaimed cookie monster, yet my heart undeniably belongs to biscotti. The magic lies in its perfect texture: delightfully crunchy on the outside, giving way to a wonderfully soft and tender interior. It’s a harmonious contrast that makes every bite an absolute pleasure, perfectly complementing my morning coffee (or, let’s be real, often my afternoon coffee too!).
Many chocolate biscotti I’ve encountered in the past have left me feeling underwhelmed, primarily due to their extreme dryness. There’s nothing more disappointing than a biscotti that feels like it might chip a tooth or requires an entire glass of water just to swallow. This recipe, however, is a game-changer. These delightful “little babies” are the absolute antithesis of dry. They achieve that coveted crisp exterior while maintaining an incredibly moist, wonderfully chewy texture on the inside – a quality we all crave in a perfect biscotti. We simply don’t do mediocre biscotti around here. Only the good stuff makes it to our baking sheets!

The Decadent Peanut Butter Cream Cheese Glaze: An Essential Pairing
And let’s talk about the glaze. Oh my goodness, the GLAZE! Seriously, friends, you simply cannot make biscotti without an absolutely killer glaze to finish them off. I won’t hear otherwise. Specifically, we’re talking about a luscious peanut butter cream cheese glaze that takes these chocolate biscotti to an entirely new level of indulgence. I was so enamored with this glaze that I genuinely wanted to (and, okay, maybe I did!) slurp it directly from the bowl with a straw. The spoon simply wasn’t cutting it for the intense, focused task of “glaze-tasting research.”
Any glorious remnants of this irresistible glaze that somehow avoid being devoured straight from the bowl are destined to be lavishly drizzled over your perfectly cooled biscotti. Try to resist shedding a tear of joy at the sheer magnificence of this sight. Once glazed, these exquisite biscotti are ready to make their grand entrance onto your plate, eagerly awaiting their companion cup of Saturday morning coffee. This combination is pure bliss, promising to make your morning routine feel like a luxurious escape.

Tips for the Perfect Biscotti Experience
To ensure your chocolate biscotti with peanut butter cream cheese glaze turns out perfectly every time, consider these valuable tips:
- Measure Accurately: Especially with flour, using a kitchen scale for precise measurements (like 240g for 2 cups of white whole wheat flour) can make a significant difference in the dough’s consistency and the final texture of your biscotti.
- Don’t Overmix: When combining wet and dry ingredients, mix just until the dough comes together. Overmixing can develop the gluten too much, leading to a tougher biscotti.
- Gentle Kneading: A few gentle kneads on a floured surface are all that’s needed to make the dough smooth and non-sticky before shaping it into a log. This helps maintain its tender interior.
- Serrated Knife is Key: For clean cuts after the first bake, a sharp serrated knife is essential. This helps prevent crumbling and ensures uniform slices for the second bake.
- Cooling Rack Importance: Cooling the biscotti on a wire rack allows air circulation, preventing the bottoms from becoming soggy and helping them achieve their characteristic crispness.
- Glaze Consistency: Adjust the milk in the glaze gradually until you reach your desired drizzling consistency. You want it thick enough to cling but thin enough to flow beautifully.
Any leftover biscotti? Your mission, should you choose to accept it, is to STASH THEM, HIDE THEM, and BURY THEM OUT OF SIGHT from anyone else! Seriously, these treats are so good, you’ll want them all to yourself. Now, let us indulge. Bon appétit!

Ingredients
BISCOTTI:
- 2 cups (240 g) white whole wheat flour
- ¼ cup (20 g) unsweetened cocoa powder
- ¾ cup (150 g) coconut sugar, (or brown sugar)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ¼ cup (57 g) butter, softened
- 3 large eggs
- 3 Tablespoons milk
- 1 teaspoon vanilla extract
GLAZE:
- 2 oz (57 g) cream cheese, softened
- ¼ cup (30 g) powdered sugar
- 2 Tablespoons creamy peanut butter
- ½ teaspoon vanilla extract
- 2 to 3 tablespoons milk
Instructions
-
Make the biscotti: Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper. Set aside.
-
In a large bowl, combine flour, cocoa, sugar, baking powder, baking soda, cinnamon, and salt. Using a pastry cutter or a fork, cut in softened butter until the mixture resembles coarse crumbs.
-
In a separate bowl, whisk together the eggs, milk, and vanilla extract until smooth and well combined. Pour this wet mixture over the dry ingredients, stirring just until the dough comes together. Be careful not to overmix.
-
Turn the dough out onto a lightly floured surface. Gently knead the dough a few times, just until it becomes smooth and is no longer sticky. Transfer the prepared dough to your lined baking sheet and gently pat it into a log approximately 10 inches long.
-
Bake the biscotti log at 350 degrees Fahrenheit for 20 to 22 minutes, or until it is golden brown and firm to the touch. Remove the log from the oven and allow it to cool on the baking sheet for 5 minutes. Then, using a sharp serrated knife, carefully cut the biscotti log into 1-inch thick cookies. Arrange these sliced biscotti, cut-side down, back onto the baking sheet.
-
Return the biscotti slices to the oven and bake for an additional 5 minutes. Flip each biscotti to its opposite side and bake for another 5 minutes to ensure even crispness. Once baked, transfer the biscotti to a wire cooling rack and allow them to cool completely.
-
Make the glaze: In a medium bowl, combine the softened cream cheese, powdered sugar, and creamy peanut butter. Using a handheld electric mixer, beat these ingredients on medium speed until the mixture is smooth and creamy. Beat in the vanilla extract and then gradually add just enough milk, one tablespoon at a time, to achieve a smooth, drizzling consistency.
-
Once the biscotti are completely cool, generously drizzle the peanut butter cream cheese glaze over each one. Serve immediately or store for later enjoyment!
Notes
Storage: Store leftover biscotti in an airtight container at room temperature for up to one week, or freeze for longer preservation.
