I’m currently three weeks into a six-week health challenge and feeling great. When I need a healthy, low-calorie meal that’s filling and simple, this Crockpot Chicken and Black Bean Taco Salad is one of my go-to dishes.

One of the best parts of this salad is that I used lettuce from my own garden. We grow two types of lettuce in our square-foot garden: salad bowl and green leaf. We have four squares dedicated to lettuce, producing about eight heads that we trim every few days. All summer we’ve been enjoying homegrown lettuce, and it makes meals taste that much better.

This salad is fresh and flavorful. The avocado-cilantro dressing adds a bright Southwest note that pairs perfectly with the shredded chicken and black beans. It’s delicious and nutritious.

Crockpot Chicken and Black Bean Taco Salad

A simple, healthy taco-style salad made with slow-cooked chicken, black beans, and a zesty avocado-cilantro buttermilk dressing.

Ingredients

For the crockpot chicken:

  • 2 large chicken breasts, (16 oz or 1 lb)
  • 1 Tbsp low sodium taco seasoning
  • 15 oz can black beans, drained and rinsed
  • 1 cup chunky salsa

One-half cup of this Zesty Avocado Cilantro Buttermilk Dressing (recipe makes 1 1/2 cups):

  • 1 cup buttermilk, (or 1 cup milk plus 1 tsp lemon juice)
  • 1 small jalapeño, deseeded
  • ¼ cup cilantro
  • 1 medium avocado
  • 1 clove garlic
  • 1 green onion
  • 2 Tbsp lime juice
  • ⅛ tsp ground cumin
  • ¼ tsp pepper
  • ¼ tsp salt

For the salad:

  • 6 cups chopped green leaf lettuce
  • ¼ cup shredded cheddar cheese

Instructions

  • Place the chicken in a small crockpot. Sprinkle the taco seasoning over the chicken, then add the drained black beans and the chunky salsa on top.
  • Cook on low for 4 hours, until the chicken is tender. Remove and shred the chicken with two forks. The mixture yields about 3½ cups.
  • To make the dressing: Combine buttermilk (or milk with lemon), jalapeño, cilantro, avocado, garlic, green onion, lime juice, cumin, pepper, and salt in a blender or food processor. Blend until smooth; add more buttermilk to thin if needed. This makes about 1½ cups.
  • To assemble: Divide 1½ cups chopped lettuce among four plates. Top each with ¾ cup of the chicken-and-bean mixture, 1 tablespoon shredded cheddar, and 2 tablespoons dressing. Serve and enjoy.
