Why This Double Chocolate Banana Cake is a Must-Try

1. Surprisingly “Healthier” Indulgence

We say “healthier-ish” because, while it’s still a treat, this recipe thoughtfully lightens things up without sacrificing flavor or texture. The secret lies in substituting oil with unsweetened applesauce, which not only keeps the cake incredibly moist but also reduces the fat content significantly. We also use just ¾ cup of brown sugar, relying on the natural sweetness of ripe bananas and applesauce to create a balanced flavor profile. It’s a smart way to enjoy a comforting dessert with a little less guilt.

2. No Frosting Needed: A Melty Chocolate Experience

Forget the sticky, often overly sweet frosting! This cake is packed with semi-sweet chocolate chips on the inside and sprinkled with mini semi-sweet chocolate chips on top. When you eat it warm, those chocolate chips melt ever so slightly, creating pockets of gooey deliciousness in every bite. The rich, moist banana-chocolate base stands perfectly on its own, offering a pure, unadulterated chocolate experience that frosting would only detract from. It’s an intentional choice that simplifies preparation and enhances the natural flavors.

3. Elevates Beyond Boring Banana Bread

While banana bread is a classic, sometimes you crave something more exciting, more decadent. This double chocolate banana cake takes the comforting flavors of banana bread and infuses them with rich cocoa and generous amounts of chocolate chips, transforming it into an irresistible cake. It’s perfect for those moments when you want a delightful dessert that feels a bit more special than your everyday loaf. Plus, just look at it – it’s as appealing to the eyes as it is to the taste buds!

4. Unforgettable Deliciousness That Disappears Fast!

How long did this cake last in our house? A mere two days! It would have been even less if not for some self-control (or spousal intervention, perhaps!). We’re not advocating for overindulgence, but this cake truly is that good. It’s the kind of cake you’ll want to sneak a slice of for breakfast, savor with your afternoon coffee, or enjoy as a perfect ending to any meal. Its addictive quality is a testament to its amazing flavor and texture.

Yields: 9 servings

Ingredients

  • 1 ¼ cups (288 g) mashed bananas (about 3 small/medium ripe bananas)
  • ¾ cup (150 g) light brown sugar, gently packed
  • ½ cup (122 g) unsweetened applesauce*
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup (120 g) all-purpose flour (stir, spoon & level)
  • ½ cup (40 g) unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup (170 g) semi-sweet chocolate chips
  • 2 Tbsp mini chocolate chips for topping – optional

Instructions

  1. In a stand mixer with the paddle attachment, mix the bananas and brown sugar until the bananas are mashed and the sugar is dissolved.
  2. Add the applesauce, vanilla, and egg. Mix together until just combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just incorporated. Be careful not to overmix.
  4. Gently fold in the semi-sweet chocolate chips. Pour the batter into a greased 8×8-inch baking dish. Sprinkle the top with mini chocolate chips if desired.
  5. Bake at 350 degrees Fahrenheit (175°C) for 25 to 35 minutes. Check the center with a toothpick; it should come out with moist crumbs, not wet batter, when done. Best eaten warm.

Notes

  • You can substitute any neutral-tasting oil (like vegetable or canola oil) for the applesauce, though the applesauce helps keep it lighter.

Tips for Baking the Perfect Double Chocolate Banana Cake

Achieving the perfect moist and flavorful banana cake is easy with a few simple tips:

  • Use Very Ripe Bananas: The browner, the better! Overripe bananas are sweeter and softer, making them easier to mash and imparting a stronger banana flavor and moisture to the cake.
  • Measure Flour Correctly: For accurate results, spoon your flour into the measuring cup and then level it off with a straight edge. Scooping directly can compact the flour, leading to a dry cake.
  • Do Not Overmix: Once you add the dry ingredients to the wet, mix only until just combined. Overmixing develops the gluten in the flour, which can result in a tough, dense cake. A few lumps are perfectly fine.
  • Oven Temperature Matters: Ensure your oven is preheated to the correct temperature. An oven thermometer can help verify accuracy.
  • The Toothpick Test: Insert a toothpick into the center of the cake. It should come out with moist crumbs attached, but not wet batter. If it comes out clean, your cake might be slightly overbaked, but with this moist recipe, it should still be delicious.
  • Cooling Time: While it’s tempting to slice into this cake right away (especially for that melty chocolate!), letting it cool for at least 10-15 minutes in the pan allows it to set properly before transferring or serving.

Delicious Variations and Customizations

While this Double Chocolate Banana Cake is phenomenal as is, it’s also a fantastic canvas for various additions:

  • Nutty Crunch: Fold in ½ cup of chopped walnuts or pecans with the chocolate chips for added texture and a classic banana bread twist.
  • Spice It Up: Add ½ teaspoon of ground cinnamon or a pinch of nutmeg to the dry ingredients for a warm, aromatic note.
  • Different Chocolates: Experiment with milk chocolate chips, dark chocolate chunks, or even white chocolate chips for varying levels of sweetness and flavor.
  • Espresso Boost: A teaspoon of instant espresso powder dissolved in the vanilla extract can deepen the chocolate flavor without making the cake taste like coffee.
  • Coconut Delight: Stir in ½ cup of shredded coconut for a tropical hint.

Serving and Storage Suggestions

This cake is truly best when served warm, allowing the chocolate chips to remain beautifully melty. A small scoop of vanilla bean ice cream or a dollop of whipped cream can elevate it further, though it’s certainly not necessary. It makes an excellent breakfast treat with your morning coffee, a satisfying afternoon snack, or a delightful dessert.

To store, cover the cake tightly with plastic wrap or place it in an airtight container at room temperature for up to 3 days. For longer storage, you can refrigerate it for up to a week. If you prefer to enjoy it warm with melty chocolate chips after storing, simply microwave a slice for 15-30 seconds or warm it in a preheated oven at 300°F (150°C) for about 5-10 minutes.
