Grilled Chicken and Apple Salad with Honey Mustard Dressing

I first picked up this recipe more than a decade ago when the grocery store handed out recipe cards with samples. I was taking home economics in high school then, and I loved collecting recipes and sampling new dishes.

My husband and I often make this salad for a quick summer dinner, especially when we can finish the chicken on the grill. It’s also a crowd-pleaser at parties. The balance of sweet and savory — tender grilled chicken with crisp apple and a creamy dressing — is exactly why this salad is one of our favorites.

Grilled Chicken & Apple Salad

Yields2 to 3 servings as a meal, 8 servings as a side dish

Ingredients

  • 1 lb boneless skinless chicken breasts
  • Your favorite chicken seasoning (salt and pepper work fine)
  • 7.25 oz box Betty Crocker Suddenly Salad Caesar Pasta Salad Mix
  • ⅓ cup Miracle Whip salad dressing
  • ¼ cup apple juice
  • 1 large unpeeled apple, cored, thinly sliced, then diced
  • ½ cup chopped pecans (optional)

Instructions

 

  • Brush the grill rack with vegetable oil. Season the chicken with your preferred seasoning (salt and pepper work well) and grill until the exterior is golden and the center is no longer pink. Remove and allow to cool.
  • While the chicken cooks, bring a large saucepan filled two-thirds full of water to a boil. Add the pasta and vegetables from the Caesar Pasta Salad mix and gently boil, uncovered, for about 12 minutes, stirring occasionally, until tender. Drain the pasta, rinse with cold water, and shake or pat dry.
  • In a large bowl, combine the seasoning mix from the pasta kit, Miracle Whip, and apple juice. Cut the cooled chicken into bite-sized pieces. Add the chicken, drained pasta, and diced apple to the dressing and toss to combine. If using, stir in chopped pecans just before serving. Refrigerate any leftovers covered.
