Start with quality ingredients. Good chocolate makes a noticeable difference in flavor and texture. I prefer larger, high-quality milk or semi-sweet chips for a rich, melty bite. Equally important is butter: different brands vary in moisture and salt, which affects spread and color. I use unsalted butter for baking so I can control the salt level, and I recommend choosing a reliable brand for consistent results.

Unsalted versus salted butter: use unsalted butter when baking so you can control the exact salt in the recipe. If you use salted butter, reduce or omit any added salt called for. Unsalted butter is standard in professional baking because brands vary in salt content, and controlling salt yields a more predictable result.

This recipe does not require refrigeration, which is great if you prefer to bake without waiting. If spreading becomes an issue, here are the methods I use to keep cookies thick and tender:

  • Use a cookie scoop. Scooping dough with a scoop rather than rolling with your hands prevents warming the butter. Warmer dough spreads more. A medium scoop (about 2 tablespoons) produces the cookies shown; a smaller scoop makes bite-sized cookies. Look for the number stamped inside the scoop to identify its size.

  • Use silicone baking mats and half-sheet pans. Silicone mats help cookies slide off easily and often reduce spreading compared with greased pans. They’re reusable and easy to clean. Parchment paper also works if you prefer disposables.
  • Always bake a test cookie first. Ovens, humidity, altitude, and ingredient variations can change how dough behaves. Bake one cookie in the center of the pan first. If it spreads too much, add 1/4 cup more flour to the dough and test again. If it looks right, proceed with the rest.
  • Bake until just set, then rest on the warm pan. Remove the tray from the oven when the centers are just set and allow cookies to finish cooking on the warm pan for 2–3 minutes before transferring to a cooling rack. This carryover cooking helps cookies firm up without becoming over-baked.
  • Let the baking sheet cool between batches. Placing dough onto a hot tray can begin melting the butter and cause excess spread. Keep dough in a cool spot and only place scooped dough on a cooled sheet for each batch.

The secret ingredient that makes these cookies soft and tender is cornstarch. Cornstarch acts as a tenderizer in the dough, giving a slightly delicate, chewy texture similar to meltaway cookies but balanced so the cookie still holds its shape. A tablespoon added to the dry mix yields noticeable tenderness without changing flavor.

24 cookies

Ingredients

  • 1 cup (226 g) unsalted butter, (2 sticks) room temperature
  • ½ cup (100 g) light brown sugar, gently packed
  • ½ cup (100 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 ½ to 2 ¾ cup (300-330 g) all-purpose flour, (start with less, do 1 test cookie, and add more if needed)
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 Tbsp cornstarch
  • 12 oz (340 g) Guittard milk chocolate chips

Instructions

  • Cream the butter and both sugars in a stand mixer fitted with the paddle attachment until light and fluffy.
  • Add the eggs and vanilla extract, mix until combined, then scrape down the bowl.
  • Whisk together the flour, baking soda, salt, and cornstarch. Add the dry ingredients to the wet mixture and mix just until incorporated.
  • TEST COOKIE: Scoop one cookie onto a silicone-lined baking sheet and bake at 350°F (175°C) for 9–11 minutes, until the center is just set. If it spreads too much, add 1/4 cup more flour to the remaining dough and test again.
  • Scoop portions of dough onto cool silicone-lined baking sheets and bake at 350°F for 9–11 minutes, until centers are just set. (Ten minutes worked well in my oven.)
  • Let the cookies rest on the baking sheet for 2–3 minutes, then transfer to a wire rack to cool. Store in an airtight container.
